The original Italian version used breaded eggplant instead of chicken in a dish called melanzane alla Parmigiana. When Italians came to America and found chicken plentiful and affordable, they adapted the recipe to create something new.

Italian-born food influencer Pasquale Sciarappa, who now lives in America, defends the dish proudly. "It was born in immigrant kitchens from people who left Italy, landed in the U.S., and made do with what they had," he wrote. "They took inspiration from dishes like melanzane alla parmigiana and recreated comfort from memory using what was available."
