Cork Food Truck Opens Restaurant After Community Raises €5K

When Nivene Sadick's food truck faced uncertainty earlier this year, the Cork community showed up in a big way, raising over €5,200 to help her dream of a permanent restaurant come true.

Cairo 2 Cork, the beloved Egyptian food truck that's been serving Cork city, is opening its first restaurant at 22 Douglas Street this Saturday at noon. Sadick, who was born and raised in Cork by her Irish mother and Egyptian father, says she and her staff "genuinely cannot wait" to welcome customers.

The new spot will focus mainly on takeaway with eight seats for those wanting to dine in. This weekend, the menu will feature favorites from the food truck, which is still running in the city centre.

Starting next week, Cairo 2 Cork will expand its offerings with authentic Egyptian breakfast options and traditional dishes. New menu items will include koshary, a comfort food made with lentils, rice, and chickpeas in tomato sauce, plus grilled kofta and molokhiya, a green stew made from jute leaves.

The fundraiser became crucial after Cairo 2 Cork and other vendors had to leave their Paul Street plaza location in June due to a planning issue. The community support helped Sadick secure the new premises and buy necessary equipment.

The success of Cairo 2 Cork shows how community support can transform a small business dream into reality. When local vendors faced setbacks, Cork residents didn't just express sympathy, they opened their wallets and proved that small actions create lasting change.

Sadick's story also highlights the beautiful blend of cultures that make Cork special. Raised at the Lough by parents from two different worlds, she learned authentic Middle Eastern cooking from her Cairo-born father and now shares those flavors with her hometown.

The restaurant represents more than just a business expansion. It's proof that when communities invest in local entrepreneurs, everyone wins with more diverse food options, new jobs, and stronger neighborhood connections.

Sadick admits the space is "nowhere near" where she wants it eventually, but after several delays, she decided it was time to open the doors and start serving. Over the coming weeks, the menu will grow and the space will continue coming together before a bigger official opening celebration.

Cairo 2 Cork opens Saturday and Sunday from noon to 7pm, with plans to start breakfast service at 9am next week.
