When Amira Al Dosari breaks 15 ice cream machines trying to perfect a recipe, you know she's onto something special.
The 53-year-old founder of Ice Station in Abu Dhabi has spent three years creating premium soft serve that celebrates the date palm tree. Her shop has served more than 145 flavors, many featuring ingredients from every part of the iconic plant.
Al Dosari's journey started with a concern. After taking ice cream courses worldwide, she noticed most recipes relied on artificial ingredients and loads of sugar. She worried about what that meant for children eating ice cream regularly.
Her solution came from kholas rotab, the softest, ripest stage of the kholas date. Its natural sweetness let her eliminate added sugar entirely while keeping that creamy texture soft serve needs. After countless attempts and those 15 broken machines, she cracked the code.
But dates were just the beginning. Al Dosari discovered the entire date palm tree could flavor her creations. She grinds palm leaves into a powder that tastes like matcha but without caffeine. She brews date seeds into a coffee substitute for her version of an Italian affogato dessert.

Her daughter Ghalia Al Mazrouei, a sustainability consultant, helped her find uses for every leftover part. They use date molasses for sweetness and discovered different date varieties taste like banana or other fruits. Al Dosari even created a flavor from palm pollen.
The menu spans far beyond dates, featuring international flavors like Costa Rican pineapple and Filipino ube. She's even made savory options like smoked salmon with cream cheese. Al Dosari is currently inventing her 448th flavor.
The Ripple Effect
Al Dosari's work does more than satisfy sweet cravings. She's transforming a traditional ingredient into something that connects locals and tourists to Gulf heritage. The date palm has sustained communities in the region's harsh climate for centuries, and UNESCO recognized its cultural importance in 2019.
Her shop recreates traditional Emirati desserts like khabisa and rahash in frozen form. Both locals and visitors line up to taste these cultural connections. She works nights from 9 p.m. onward, preparing 12 different bases that become the next day's flavors.
While Al Dosari has opened a second location and showcased her ice cream at events in Uzbekistan and Egypt, she's cautious about expanding too quickly. She worries about compromising the quality that makes Ice Station special.
Her daughter sees the bigger picture. Food speaks a universal language that doesn't need translation, connecting people across cultures through shared enjoyment.
Al Dosari continues her nightly ritual of churning, tasting, and perfecting, putting Abu Dhabi on the map for premium soft serve while reminding every customer they're tasting centuries of heritage in each spoonful.
