Spices lose their flavor when ground at high temperatures, but brothers Akash and Ashish Agarwal just changed the game for Indian kitchens everywhere.

The Raipur brothers launched ZoFF (Zone of Fresh Food) in 2018, bringing Air Classifying Mills to India for the first time. While traditional hammer mills grind spices at scorching temperatures up to 120 degrees Celsius, their cool grinding technology uses air to break down spices at much lower temperatures.

The difference matters more than you'd think. Spices start losing their pungency and aroma at just 60 degrees, meaning most store-bought spices have already lost much of what makes them special by the time they reach your kitchen.

"In cool grinding, air breaks spices into particles before the grinding process begins," Akash explains. "The heat generated is very less, so the oil, aroma, and pungency remain intact."

The brothers didn't stop at better grinding. They also developed quad-layer zip-lock packaging that seals in freshness and extends shelf life to 15 months compared to the standard 12 months.

Their packaging includes an aluminum foil layer that prevents moisture from forming clumps and keeps spices free-flowing. No more transferring spices to containers or storing them in the refrigerator.

After graduating with MBAs from Delhi and Australia, the brothers initially joined their family's steel manufacturing business. But they spotted a massive gap in India's spice market, where 80 percent remains unorganized and quality varies wildly.

They spent five years building a 3-acre manufacturing plant in Raipur with fully automated processes. No human hands touch the spices during roasting, grinding, or packaging, ensuring consistent quality.

The brothers source their raw materials from across India, getting chillies and turmeric from the South, coriander and cumin from Rajasthan and Gujarat, and black pepper from Kerala. Each region offers unique flavors that shine through when properly preserved.

Today, ZoFF offers powdered spices, whole spices, and seasonings including garam masala, biryani masala, and even a unique turmeric-based drink called Haldamrit. The company employs 100 people and generates Rs 60 crore in annual revenue.

Their success on Shark Tank India validates what the brothers have known all along: quality matters. By bringing advanced technology to a traditional industry, they're raising standards across the entire spice market.
