The project at UNAM's Educational Pilot Beer Plant tackles a significant problem. Mexico wastes roughly 2,000 metric tons of bananas every year, along with countless pumpkins, sweet potatoes, and other produce that never make it to consumers.
Lead researcher Agustín Reyo-Herrera and his team discovered these foods are perfect "adjuncts" for beer making. The overripe fruits and vegetables contain fermentable sugars that complement traditional barley malt while adding unexpected nutritional benefits.
Their banana beer formula uses a precise 25% fruit to 75% barley ratio, creating balanced flavor while boosting potassium and dietary fiber content. Pumpkin varieties add extra protein and carbohydrates, while amaranth-infused beers deliver plant-based protein and iron.
The students aren't just experimenting randomly. They're using scientific methodologies to standardize each recipe, measuring exact nutrient levels and calculating how much fermentable carbohydrate each ingredient contributes to the final product.
Sweet potato and cassava beers are currently in testing phases. Each new ingredient changes the beer's color, aroma, and taste while maintaining alcohol content at or below 8%.
